Today's lunch was this tasty Roasted cauliflower salad with turmeric dressing.

Lately, I have been trying to find as many recipes as possible that include turmeric, as it is a natural anti-inflammatory. Turmeric has been found in clinical trials to decrease joint pain, decrease inflammation, and improve joint mobility and function after eight months of use. Adding turmeric to your diet, wherever possible, can help aid physical recovery post-workout, and could be a beneficial supplement for athletes who want to prevent joint pain and problems.

Turmeric also has many healing properties for the skin. As a natural anti-inflammatory, it reduces redness or other skin irritations. It’s antibacterial and is full of antioxidants, so it’s great for blemishes, acne and skin balance.

Ingredients

1 Cauliflower, broken into small florets
1 red onion, chopped finely
1/2 cup sultanas
1/4 cup toasted pinenuts or almonds work nicely here too
large handful of chopped coriander

For the Dressing

1 Tbsp. apple cider vinegar
Juice and zest of half a lemon
1 clove garlic, crushed
1 Tbsp. turmeric
1 tsp. manuka honey
pinch Himalayan sea salt

Roast the cauliflower for 20 minutes in olive oil, or until it is slightly tender. Add the remaining ingredients together in a bowl. Whisk together the dressing ingredients until combined, and add to salad when you are ready to serve.
