This raw beet and carrot salad is a staple in our household and is a salad that my mum has made since I was a child. With Manuka honey and apple cider vinegar in the dressing, it has endless health benefits aside from the veges themselves.
Apple cider vinegar is a miracle food. Its benefits are endless; it lowers our blood sugar level, kills bad bacteria in our bodies (pathogens), lowers cholesterol and speeds up your metabolism!
If you don't want to drink the stuff straight, then add it to your salads rather than using store-bought dressings!
Here is the recipe.
2 medium beetroot grated
2-3 medium-sized carrots grated
a handful of freshly chopped parsley or mint
sunflower seeds and pumpkin seeds
and for the dressing;
1 t Manuka honey (optional sweetener)
1/4 cup apple cider vinegar
Sometimes I like to add a handful of currants and some feta to the salad for extra flavour, and softness.
