We all love chips and dip, but it's always good to have a healthy alternative to go with your Friday night wine!
These healthy nibbles were made by my family friend Rebecca. She is a big foodie, and her and my mum spend hours sharing recipes they have made with one another, and talking food, wine and fitness. Rebecca and mum have been a massive influence on my taste buds, and have inspired me to be creative with cooking.
Mediterranean inspired, these bites are thick slices of cucumber, which have been slightly hollowed and stuffed with Bulgarian feta, coriander, olives and cherry tomatoes. They were so tasty, and the platter looked beautiful on the table!
